Ingredients:
1 Lb Green Beans, trimmed and cut into pieces
4 Tsp Olive Oil
3 Shallots, finely chopped
2 Garlic Cloves, Minced
1 Large Tomato, diced
½ Tsp Dried Oregano
½ Tsp Salt
¼ Tsp Pepper
¼ Cup Packed Parsley
Bring ½ inch of water to a boil. Add green beans and cook,
covered until tender, about 6-7 minutes. Drain and set aside.
In skillet, add oil over medium heat. Add shallots and
garlic. Cook until softened. Add tomato and oregano. Cook about 2 minutes. Add
green beans, salt and pepper. Cook until heated through, about 2 minutes.
Spoon into serving bowl and sprinkle with parsley.
