Fried Rice

FRIED RICE

Ingredients:
4 Cups Cooked Rice (1 cup uncooked)
1 Cup Frozen Peas, thawed
½ Cup Onions, diced
2 Tbsp Carrots, finely grated
2 Eggs, beaten
1 ½ Tbsp Butter
2 Tbsp Soy Sauce
Salt & Pepper
Meat (optional)

Directions:

Cook rice: in a pot, add 1 cup rice to 2 cups salted water and bring to a boil. Once water starts to boil, place lid on put and reduce to simmer. Cook 20 minutes. Strain rice and put in refrigerator to cool.

In a small pan, scramble eggs until completely cooked.

Mix together cooled rice, peas, carrots, eggs and onion in bowl. Melt 1 ½ Tbsp butter in wok. When butter is melted, dump in rice and vegetable mixture. Add soy sauce and seasoning. Cook 6-8 minutes. Stirring often.

**You can also add cooked meat like chicken, shrimp, etc. to the wok.
