Oriental Chicken Salad

ORIENTAL CHICKEN SALAD


Dressing:
3 Tbsp Honey
1 ½ Tbsp Rice Wine Vinegar
¼ Cup Mayo
1 Tsp Dijon Mustard
1/8 Tsp Sesame Oil

Salad:
1 Tsp Salt
¼ Tsp Pepper
1 Boneless Skinless Chicken Breast Filet
3 Cups Romaine Lettuce
1 Bag Shredded Coleslaw
1 Green Onion, Chopped
1 Tbsp Almonds, Sliced
1/3 Cup Crispy Chow Mein Noodles
2 Tbsp Olive Oil

Blend together ingredients for dressing in a small bowl. Mix well and place in refrigerator to chill.

Cut chicken into bite sized pieces. Heat oil in frying pan and cook chicken until completely cooked. Set aside.

Prepare salad by tossing chopped romaine with 2 cups coleslaw. Sprinkle green onions on top of lettuce. Toast almonds and sprinkle over salad. Add chow mein noodles.

Place chicken on top of salad. Mix in the dressing and serve.
